The Little Blue Elephant food truck is officially back on Minot Air Force Base, bringing a flavorful mix of authentic Thai cuisine and fresh sushi that is sure to draw a crowd again. Since its return to the base on March 23rd the food truck has been giving Airmen and families a go to spot for a quick, satisfying meal. Conveniently parked next to the Central Brew Coffee Kiosk, it’s an easy stop for lunch or an early dinner, open Monday through Friday from 11 a.m. to 5 p.m.
Customers can choose from hearty platters to lighter sushi selections, ensuring there is something for every appetite. One standout item on the menu is the “Monkey Ball”, tempura fried rolls stuffed with salmon, cream cheese, and topped with a special sauce. It’s a filling and flavorful choice that lives up to its reputation, often leaving diners pleasantly surprised at just how satisfying it is.
