Central Brew coffee sprung to life in a short seven weeks this past fall, which can be chalked up to fate, the right things falling into place at the right time, and the dreams of two ladies, who had been friends for many years.
When Mary Prough learned that the coffee shop in the Brick + Mortar District building was available for rent, on a whim, she decided to contact the building owner for some details and the wheels started turning. It wasn’t until having lunch with Dana Zaback the next week, where she mentioned the dream of owning a coffee shop and learned that it had been in Dana’s heart, too, that the idea of Central Brew really came to life.
Often, people plan for years to start a business, but in this case, when it’s right, it’s right and within seven weeks, Central Brew coffee opened its doors to the public on October 19. With the help of friends and family, their dreams came to fruition.
When asked what people should know about Central Brew both Prough and Zaback said that it is just a cozy atmosphere.
The neon sign hanging in the space that declares, “This is my happy place” says it all. They want people to feel welcome, relaxed, and comfortable when they walk in the door. It is a great place to meet a friend for a coffee, to stop for soup or a scone, but it is also great for college students to spend some time getting caffeinated and studying or writing a paper.
Their most popular drinks include the Lotus drinks, which they offer in a variety of flavors. The Bourbon Caramel latte is one of their specialty drinks and is highly sought after every day. They have a variety of sugar free syrup options and are really helpful when it comes to special dietary needs when recommending drink options.
Central Brew is located in the Brick + Mortar District building, formerly the Bricks building next to The Foundry. It is just east of Ebeneezers with a physical address of 400 East Central Ave, Suite 104.. They can be found on Facebook at Central Brew and on Instagram at Central Brew Minot.
The business is truly a family. From the owners who have been friends for many years to their spouses and 10 kids (5 each), who help out when they can and the baker, who is Prough’s mother in law, to their staff, who they feel incredibly blessed to have, it really is a big extended family. Many of their baristas are college students, who love coffee and are very passionate about the industry. They also have people who just work Saturdays while having full time jobs during the week. Prough and Zaback both said that they feel incredibly fortunate to have the amazing staff that they do especially in times when it is often difficult to staff businesses.
